breakfast, lunch & mac and cheese

saturday=homework day

inbetween my busy typing i got in a little breakfast:

 

  • voskos low fat greek (1st try-winner)
  • honey morning o’s
  • weetibix bran
  • apple , banana
  • honey almond butter
  • 🙂

break number 2 i got in some workout time.

jullian michaels 40 min. 6 week, 6 pack- its a good one!

and

crunch 25 min. ass and abs- also great.

i made some quick fuel to continue on my typing:

it was a great success!

  • the remaining yogurt from this morning
  • spinach
  • spirolina
  • peanut butter
  • the remaining apple and banana
  • 🙂 🙂

we decided to be awesome last night….we snacked on cheese and crackers and we made….

mac and cheese!

we added a few special touches:

for desert:

i had a brown cow chocolate yogurt with peanutbutter

rye had hagendaas chocolate peanut butter ice cream.

special coffee

fancy coffee at home:

  • brew some coffee- i have organic peets blend at the moment
  • get some delicious creamer and toppings: i got the “foam” from whole foods-its a 0 calorie vanilla “cappuccino” foam that goes on like whipped cream, it evaporates quickly but leaves a really yummy flavor lingering in your coffee, and it looks really special at first. whipped cream is good too!
  • add some sweetener-i like truvia
  • and a dash of cinnamon.
  • and have a lovely morning!

and for saturday morning breakfast:

after a good 2 hours of morning essay writing i decided on a mango-orange-green smoothie 😉

  • 1 mango
  • 1 orange
  • a few handfuls of spinach
  • a little almond milk
  • 2 ice cubes

it was a really good one!

i also treated myself to some peanut butter jelly pancakes!

..its embarrassing..i used ready to be made mix that comes a package that looks like a whipped cream bottle..

even more embarrassing it took me a few tries to make them..alice helped me get rid of the ones that didn’t make it onto the plate.

overall they were good. topped with a little peanut butter, a bit of strawberry jam and a dash of raw honey.

and how cute was this sleepy head that i walked in on:

the smoothie and pancakes helped to fuel a good workout.

when i got home i did a mega clean up! the house is tidy ready for ryan to be back in it!

berries and cream smoothie

 

saturday morning, a glorious morning of sleeping in.

my coffee wasnt so exciting,

i made it:

ryan was off to work early so i had to fend for myself…

it was good, just not special.

my breakfast however….

now that was incredible!

i woke up with a smoothie in mind.

i knew it was what i had to do.

so after my workout..a really good one might i add!

i got to work on this:

i call it the berries and cream! or..the berries with green 😉

ok so the color does not justice but it was incredible!

a true winner:

  

the berries and cream:

  • 1/4 greek yogurt
  • about 2.5 handfuls of organic spinach
  • 1 tablespoon coconut butter
  • 5 frozen large organic strawberries
  • 1/3 cup organic frozen blueberries-i threw in a few fresh too..just had them on hand
  • 1 scoop vanilla whey (i like jay robb or biochem) protein powder

blend blend blend and then add 3 ice cubes, a little water give or take..i like mine really thick, then blend a bit more and..tadah!! delicious!!

i was off to school for some math lab..incredibly happy with my smoothie in hand..

my arms were shaky from all the weights that morning. i was pleased…but a lil shaky….

 

school..i was here for 3 hours..

le mandarette

last night was a not so eventful night of watching the cable guy and ordering take out….

however i am not complaining.

we are very fortunate to live down the street from fantastic chinese food.

it is called le manarette.

it is the healthiest, lightest and best feeling (after you eat it) chinese i have ever found.

and they are very nice and love alice.

  • we had shrimp and broccoli to share
  • brown rice
  • spring rolls
  • and ryan had some duck
  • it was very tasty

in bed early on a saturday night for work early on a sunday.

it was very hard to fall asleep even though i was so tired..somewhere along the way i managed.

dog park and a snack

after breakfast my sasha came over for a visit and brought sweet ceci with her.

ceci is getting older 😦

she and alice got along. alice was glad to have a wise and knowledgeable girl around.

sash helped me finish the runaways.

we did what we do best..

computer and cozy time with the dogs.

we stopped for coffee:

i got a decaf sash got some tea….seems that alice was eyeing mine:

alice did a lot of this..

and more..

and more sitting..

she really thinks she is a person..i had to remind her to pleasee play like the other dogs..

she didnt listen of course.

when we got home sash requested a snack:

pesto veggie sandwich with cheese and love.

breakfast sundae

this morning was another day of not zz’s for me’s.

i had a meeting at work..it is my day off..it was at 5:30am

needless to say i had another day like yesterday..

zombie-ish feelings..

no getting back to sleep..

i had a very nice 30 min. cardio workout that i was quite proud of myself for..it was a toughy

after lounging and coffee sipping from my guy..it was a truly a fancy indulging one:

i started some laundry and got my breakfast goin on..

i wanted to get in some greens..

  • little less than 1/2 a organic pear
  • 1 kiwi
  • handful of organic spinach
  • 1/2 tablespoon coconut butter
  • little over a tablespoon of organic raw honey
  • tiny bit of water
  • blend away

from a hovering giants point of view:

i didnt want to combine the smoothie with yogurt,

because i still enjoy the texture of the yogurt at its natural state.

so i layered the two:

 

  • 1/4 cup greek yogurt
  • little bit of smoothie
  • 1/4 cup greek yogurt
  • more smoothie

topped with:

  • natures path vanilla almond granola
  • organic blueberries
  • a little organic pear
  • a little almond/peanut butter

it was a beauty

from an indulging point of view:

i watched the runaways and browsed bloggers..the runaways..not so good..

ps: star fruit of the day: KIWI

i learned that the seeds actually have omega 3 fatty acids in them..along with plenty of good stuff; vitamins.. minerals. very neat.

pasta please

it was a busy day of the gym, laundry and cleaning house.

saturday night, ryan was working until about 8 so i got to work on some dinner for the man.

pasta is indeed my favorite food, i decided to get creative:

on hand i had a good assortment going on:

i like to prep everything before i start so i dont get overwhelmed.

i gave myself points for cutting a lot of veggies on a little cutting board.

salor jerry rum was on sale at ralphs.. and it was even a special anniversary bottle so i got one….

add a decent amount of extra virgin olive oil:

add onions and jalepeno until soft,

then add veggies and garlic (this way the garlic wont burn)

cover from time to time to steam:

once veggies are soft add tomatoes:

add about 1 tablespoon of tomato paste, oregano to taste and chopped parsley (reserve some for garnish)

(i had curly but flat leaf would be just as great)

meanwhile preheat oven to 450 and cook pasta al dente, about 3-5 min. less than the instructions recommend.

combine pasta and sauce and add parmesean cheese to the mixture, about 1/4 cup.

spoon into caserole dish,

cover top with a few slices of bree,

bread crumbs,

more paresean cheese,

and a drizzle of olive oil.

bake for about 10 minutes, until all of the cheese has melted and the breadcrumbs are golden and bubbling.

top with remaining parsley and one more drizzle of olive oil:
