amazing pancakes

ps

this morning i made pancakes!

they were my first pancakes from scrach..

i proudly sent a photo to my cousin and she quickly resonded…”how have you never made pancakes before?”

it was a good question…. and i did not have a good answer….

however, i will be making more, because, they were….amazing!

the recipe is a just an origional, plane jane, standard recipe for pancakes that i got off of allrecipes.com

i did however add 2 teaspoons of cinnamon and 1 teaspoon of vanilla extract…..super pancakes!

for my love:

  • vanilla/cinnamon scented pancakes
  • honey almond butter in the middle
  • side of papaya
  • maple syrup in a pretty saucer (its meant for sake but maple syrup works too!)
  • dusted with powdered sugar (sprinkled really…. i do not have a sifter..)

he was playing sunday morning video games, i did not want to intrude so i delivered these to him quietly.. he was a happy boy.

for me:

just like ryans although mine is missing a quarter because i had to give alice a little sunday morning pancakes 🙂

weeks eats

did you think i forgot?

here are my eats for this week….been really working at saving money and making all of my edibles for work at home:

so there are my breakfasts..:

ok, so the fruit, i did not make at home 😉

there were my lunches:

this was my super veggie sandwich,

rudi’s 7 grain bread is amazing! if you have not yet tried….do so now! please 😉

i also made a super deluxe veggie wrap….although….this picture does not justify its super deluxe-ness….

oh and this….this was a lovely treat from my lovely husband….

he prepared it for me the night before while he was getting dinner together as i ventured home from school….in my beautiful new car might i add ;)..

oh but back to this….it was like a yam pudding heaven….and i was in yam pudding heaven when i ate it….it made work and school all better..and it was made with love from my love so i felt a sentimental value nourishing my body too.

kale smoothies that have been absent for way too long!

  • kale
  • mango
  • almond butter
  • activia
  • truvia

  • kale
  • banana
  • vanilla whey protein
  • maca
  • blueberries

and our dinners….which my man has been generously volunteering to make most of my busy school week…. what a nice guy!

beautiful tostadas and rice

veggie wraps including sauteed eggplant, zucchini and carrot with kobocha!

and a hot out of the oven flour-less chocolate cake!

some nights we had subway ..

some nights we did our own thing.. i did not take pics 😦

i made myself pasta last night..rye had leftover pasta i made him and salad

this pasta makes me so happy….

  • whole wheat pasta shells
  • spinach
  • butter
  • olive oil
  • garlic
  • a little teriyaki sauce….i know its weird but i like it!
  • parmesan
  • pepper
  • cayenne
  • mahi burger with cheese
  • love it!

..it was spending time with its honda friend while i was at school..

Sunday Brunch

ok….so i have a secret….this is a sunday brunch from last sunday….but that doesn’t take away any of its sunday brunch special-ness dignity right?!

yes this is how behind i am….how do you all do it?

with work, school, my working out schedule and and fullfilling my duty to attain a somewhat high standard as a wife at home….i just cant find the time to fit in my bloggin at the end of the day…. i apologize- ill fit you guys in better somehow 😉

so anyhow, look at what my husband blessed me with last sunday for brunch….

we didnt eat until about 1 and i was becoming impatient and starving-however, the wait was worth it:

our menu included:

  • rudis 7 grain bread french toast
  • egg frittata
  • fresh fruit
  • coffee
  • love

it was absolutely delicious and after devouring my entire plate, i was well fueled for our hike with alice later.

alice had some breakfast too :

eggs for alice:

no coffee for you miss alice..

later that day we came home and called it a day on the couch.

we watched gangs of new york- which we had not seen.

i was very impressed….and it is a very violent movie might i add….

but the acting is great.

i felt so guilty because i like the villans acting so much that i kept being tricked into liking his character and….he was a very, very bad man!

after lots of yummy assorted appetizing treats throughout our movie,

it was more mac and cheese for dinner!

ryans take this time:

alice was really ready for bed!!

a friend for me, a friend for alice.

tuesday night my friend audrey came over.

rye is still out of town so it was an almost all girls night.

audrey brought her dog-alice’s very good friend paco.

dave didn’t have any visitors special for him but he was happy to include himself in everyone elses visit.

we made a lovely although quite large arrangement of deliciousness:

needless to say we had some leftovers although nobody was complaining.

alice and paco had a lot of fun too:

ramen

Thursday I had the remaining brussel sprouts from dinner the night before in a beautiful salad

ps did i mention ryan made them and they were ridiculously amazing! ok, well there i said it now, brussel sprouts i am such a fan of yours 😉

followed by a delicious snack before my workout!

if you have not yet discovered the ‘sumo’ tangerines, you have to try them, they are seasonal and amazing!

i normally am not a citrus fruit kind of gal but i have been pretty into these lately.

accompanied by some 365 honey morning o’s, chia/fiber blend and unsweetened vanilla almond milk:

friday i treated myself to my fave veggie sandwich!

complimented by a zevia ginger rootbeer and ketchup:

ps the zevia is 0 cal. and its sweetened by stevia. it is really not bad. the root-beer is my favorite.

i was really craving a pre-made smoothie juice, i try to stay away from them for the most part because of all of the sugar but every now and then is fine. i felt really good after i drank it and it fueled me during a great workout.

rye was getting ready for his trip all day. hes leaving town for work for almost 2 weeks. he brought home these ‘healthy’ ramens. i was really not to excited about them, but i was wrong. i grew up on top ramen and always loved it..(i know its a terrible thing to admit)

this ramen hit the spot!

we threw in the leftover chinese from the night before.

the salads were huge..i couldnt even finish half of mine. but it was delicious!

i am going to miss my sweet man!
