special coffee

fancy coffee at home:

  • brew some coffee- i have organic peets blend at the moment
  • get some delicious creamer and toppings: i got the “foam” from whole foods-its a 0 calorie vanilla “cappuccino” foam that goes on like whipped cream, it evaporates quickly but leaves a really yummy flavor lingering in your coffee, and it looks really special at first. whipped cream is good too!
  • add some sweetener-i like truvia
  • and a dash of cinnamon.
  • and have a lovely morning!

and for saturday morning breakfast:

after a good 2 hours of morning essay writing i decided on a mango-orange-green smoothie 😉

  • 1 mango
  • 1 orange
  • a few handfuls of spinach
  • a little almond milk
  • 2 ice cubes

it was a really good one!

i also treated myself to some peanut butter jelly pancakes!

..its embarrassing..i used ready to be made mix that comes a package that looks like a whipped cream bottle..

even more embarrassing it took me a few tries to make them..alice helped me get rid of the ones that didn’t make it onto the plate.

overall they were good. topped with a little peanut butter, a bit of strawberry jam and a dash of raw honey.

and how cute was this sleepy head that i walked in on:

the smoothie and pancakes helped to fuel a good workout.

when i got home i did a mega clean up! the house is tidy ready for ryan to be back in it!

busy, work, love, school, workout food & busy

oh i have missed you!

it has been a busy, busy week..ive fallen so far behind..

there were days, and a series of events that seemed very similar at times..

there was coffee of course:

to save on money, i tried to recreate the coffee bean iced coffee i love so much..i only managed to succeed once.

and lunch at work:

many of which happened to be tasty salads:

some salads were special with leftover chinese from valentines day and home made dipping sauce.

others were special with left over kabocha squash.

there was more kabocha snacking on the drive to school:

i switched it up from time to time:

delicious veggie sandwich from a deli at the corner. .. why is mayonnaise and toasted bread so amazing..?

i tried a new yogurt after i was given a free sample at work. It was amazing! love it. i added chia:

i had peanut butter-almond butter & jam oatmeal of course:

i started school:

i got some girl time with alice in the healing outdoors:

my wonderful husband made me many dinners this week, due to school and study time.

many consisted of beautiful salads:

one with a delightful chipotle mahi burger with cheese.

and kombucha’s to aid in homework time:

alice was her usual cute self, and didnt fail to keep me company and give me deep, thoughful glares from time to time.

it was an eventful and good week.

this morning, a lovely sunday morning, a sunday morning that longed to be spend taking advantage of my big warm cozy bed..

however..

i was on my way to work before the crack of dawn.

i was a productive early riser,

i picked up coffee for myself and two nice gals,

it was to early on a sunday..so coffee bean was closed..

i settled for starbucks.

coffee bean supports me in the sense that sundays are a day for sleeping in.

i took a good morning photo for rye guy in his comfy sweater that i borrowed for a dose of sentiment:

and before that i packed my fave..peanut butter almond butter jam oats..

really not a short way to say that. but neither butters can be left out. they are of equal importance.

and i even tried the strawberry preserves for the first time in the mix.

they were lovely as i had assumed.

they even made my oats look beautiful all swirled in and strawberry like.

and then it was over..

the red white and blue thing was an accident..didnt mean for it to turn out so patriotic..

after work i came home to my husband and we took our girl out to runyon for a hike.

the day was beautiful and the sun was healing.

ryan is still a little under the weather.

i will take care of him.

oatie mornings & salad nights

heres what has been going on

the usual:

i finished another almond butter….you know what that means….oatmeal in an empty jar time!

i prepped:

i indulged:

not a drop was left behind:

shared another smoothie:

  • kefir
  • bee pollen
  • spirolina
  • banana
  • dates
  • delicious

later that day..or possibly all this week i have been quite tired..so i felt in need of this:

a little iced coffee pick me up before the gym:

  • home made coffee
  • almond milk
  • truvia

it has been a week of salad and cheese night!! and it may not sound all that exciting but let me tell you….it really has been!

i scouted some super cuties:

thursday morning i prepped the usual needed work dailys:

i packed for two:

i started to bring my own mug to work to save on paper waste:

it feels so good to use my own mug at work!

my almond butter jar was about gone….i knew what i had to do!

more indulging happened here:

after work i had a really great yoga class.

it made me incredibly relaxed and ready to be cozy at home.

for dinner we made another huge salad.

i chose to use a veggie we hadnt ever used before….

and the veggie star of the night goes to:

fennel..could have sworn i took a picture but it seems to be m.i.a..

anyhow, it was quite bizzaar to me how it really does taste like black liquorish.

i haven never been a fan of black liquorish, but i am now a fan of fennel.

 

i baked a yam and readied lunch for friday too:

fennel included.

 

 

friday morning: packed, unloaded..almost left the salad at home but remembered it was on my desk once i was already in the car..anyway i salvaged it..

such nice light dinners lately, i was very hungry in the morning, so i had a pear and a greek yogurt.

i was happy to note that this yogurt has 18 grams of protein. i was in need after such a great yoga class yesterday.

 

i brought my mug to work again.

i favor this one, as you can tell its warn in.

my salad was so good!

friday afternoon and i really needed a treat:

after my workout, i came home to find this little guy napping. my pictures interrupted his sleep, but i think he forgave me.

i added a special treat to the rest of my coffee later that evening.

i rounded up a loot of goodies:

i baked some veggies whose welcome stay in my refrigerator was nearing overdue.

i put them out with pesto for dipping. perfect way to sneak in those veggies.

somebody was incredibly tired:

i thought somebody should let her know about this:

she didnt appreciate my concern after-all:

such interruptions only bothered her for so long..

she went about her stubborn way in spite of my warning

ryan and i shared a treat:

we made them with this silly thing:

and that was another week.

 

 

 

breakfast to all and to all a good morning

i was scurrying around the kitchen early this a.m. (still a bit jumpy from the movie last night) to ready my usual breakfast before work as well as breakfast for a coworker!

for her:

peanutbutter & jelly & banana toasted sandwich

pb&j&b:

  • miltons healthy grain
  • bonne maman rasperry preserves
  • organic peanut butter
  • organic very ripe (very sweet) banana

for myself, i finally gave a go at these overnight oats i have been hearing so much about! and the verdict….um love em!

my breakfast really turns more into lunch. i ate a little of my fruit with my coffee but wasnt feeling up to my breakfast until my lunch break.

here was my line up of treats in my fancy prada (now) lunch bag:

i had a sudden need for almond butter so i saved the peanut butter and had my oats with this instead, so good!

overnight oats before almond butter:

my first overnight oats:

  • 1/3 cup organic old fashioned oats
  • 1/3 cup of plain, non fat greek yogurt
  • 1/3 cup organic, unsweetened almond milk (would also be great with vanilla!)
  • cinnamon
  • tsp vanilla extract

ps the i heart pears at the moment!

and for a pre-work out/snack/lunch i had a smoothie on my way home from work:

spinach and romaine smoothie:

  • 1 head organic romaine lettuce
  • couple handful’s organic spinach
  • 1/2 frozen organic banana
  • 1/4 cup organic unsweetend almond milk
  • 1 tbsp organic coconut butter
  • 1 packet truvia sweetner

it was a bit romain-y, may be sweeter with a whole banana.
