special coffee

dedicated to jenny, aka “http://fitgirlfoodie.wordpress.com/”

fancy coffee at home:

  • brew some coffee- i have organic peets blend at the moment
  • get some delicious creamer and toppings: i got the “foam” from whole foods-its a 0 calorie vanilla “cappuccino” foam that goes on like whipped cream, it evaporates quickly but leaves a really yummy flavor lingering in your coffee, and it looks really special at first. whipped cream is good too!
  • add some sweetener-i like truvia
  • and a dash of cinnamon.
  • and have a lovely morning!

and for saturday morning breakfast:

after a good 2 hours of morning essay writing i decided on a mango-orange-green smoothie 😉

  • 1 mango
  • 1 orange
  • a few handfuls of spinach
  • a little almond milk
  • 2 ice cubes

it was a really good one!

i also treated myself to some peanut butter jelly pancakes!

..its embarrassing..i used ready to be made mix that comes a package that looks like a whipped cream bottle..

even more embarrassing it took me a few tries to make them..alice helped me get rid of the ones that didn’t make it onto the plate.

overall they were good. topped with a little peanut butter, a bit of strawberry jam and a dash of raw honey.

and how cute was this sleepy head that i walked in on:

the smoothie and pancakes helped to fuel a good workout.

  • 30 min. stair stepper
  • squats
  • biceps curls
  • row
  • kickbacks
  • abs
  • plank

when i got home i did a mega clean up! the house is tidy ready for ryan to be back in it!

you make me coffee, i make you breakfast.

ok, now this is a special coffee..

look at that:

he says he makes them with love..that would explain it.

i stayed in bed and did homework and indulged in my beautfiul warm drink, in my cozy warm bed, with my cute warm dog cuddled under the covers with me, for quite some time.

as i made my way out of bed to start some breakfast i found this:

isnt he cute?.. (xbox)

he makes me coffees, i make us breakfast, its our sunday tradition.

these..amazing! really though..so good.

my guy is an egg guy.

i started like this: (ps isnt my new cutting board gorgeous?!)

i added some butter to a hot pan.

sizzleeee, sizzleeeeee, sizzzzzlleeeeee

in went to eggs:

i readied this, it was destined to be toasted:

add spinach:

presto!

um..mom wheres mine?

i didnt forget the kids!

they get special sunday breakfast too:

she was very pleased:

i attempted to recreate the berries and cream like yesterday..but i was out of vanilla protein..

i failed..it was really nothing to brag about:

it really had good potential! but it was lacking the vanilla/cream aspect.

the highlight was really the almond butter and granola..

rye and i had a really good workout!

he burned 1000 calories! whoa! i was super proud.

i had a good balance of cardio, legs and abs but my arms were very soar.

thats me, and you can see rye behind me in the blue:

dinner wasnt to exciting. leftover pizza from saturday and a yummy salad i made.

lets have a great week!

berries and cream smoothie

saturday morning, a glorious morning of sleeping in.

my coffee wasnt so exciting,

i made it:

ryan was off to work early so i had to fend for myself…

it was good, just not special.

my breakfast however….

now that was incredible!

i woke up with a smoothie in mind.

i knew it was what i had to do.

so after my workout..a really good one might i add!

i got to work on this:

i call it the berries and cream! or..the berries with green 😉

ok so the color does not justice but it was incredible!

a true winner:

the berries and cream:

  • 1/4 greek yogurt
  • about 2.5 handfuls of organic spinach
  • 1 tablespoon coconut butter
  • 5 frozen large organic strawberries
  • 1/3 cup organic frozen blueberries-i threw in a few fresh too..just had them on hand
  • 1 scoop vanilla whey (i like jay robb or biochem) protein powder

blend blend blend and then add 3 ice cubes, a little water give or take..i like mine really thick, then blend a bit more and..tadah!! delicious!!

i was off to school for some math lab..incredibly happy with my smoothie in hand..

my arms were shaky from all the weights that morning. i was pleased…but a lil shaky….

school..i was here for 3 hours..

isnt the library beautiful!

friday night leftover remix

it was finally friday!!

and a busy one at that!

work was really, really busy.

i made it to the gym late, and i was really ready around 6 when it was finally time to get relaxing in.

i was totally looking forward to saturday morning,

the first morning in 2 weeks that i would get to sleep in 🙂

ryan fixed me appetizers while he got dinner together voluntarily.

we had leftover rice from chinese food,

so….

reeeeemiiiixxxxx

ryans famous veggie fried rice:

it was rediculous! truly his best.

he got a picture of sleepy alice and i shortly before we were both in bed:

breakfast sundae

this morning was another day of not zz’s for me’s.

i had a meeting at work..it is my day off..it was at 5:30am

needless to say i had another day like yesterday..

zombie-ish feelings..

no getting back to sleep..

i had a very nice 30 min. cardio workout that i was quite proud of myself for..it was a toughy

after lounging and coffee sipping from my guy..it was a truly a fancy indulging one:

i started some laundry and got my breakfast goin on..

i wanted to get in some greens..

  • little less than 1/2 a organic pear
  • 1 kiwi
  • handful of organic spinach
  • 1/2 tablespoon coconut butter
  • little over a tablespoon of organic raw honey
  • tiny bit of water
  • blend away

from a hovering giants point of view:

i didnt want to combine the smoothie with yogurt,

because i still enjoy the texture of the yogurt at its natural state.

so i layered the two:

  • 1/4 cup greek yogurt
  • little bit of smoothie
  • 1/4 cup greek yogurt
  • more smoothie

topped with:

  • natures path vanilla almond granola
  • organic blueberries
  • a little organic pear
  • a little almond/peanut butter

it was a beauty

from an indulging point of view:

i watched the runaways and browsed bloggers..the runaways..not so good..

ps: star fruit of the day: KIWI

i learned that the seeds actually have omega 3 fatty acids in them..along with plenty of good stuff; vitamins.. minerals. very neat.

i found this awsome blog that taught me such a thing:

http://www.incrediblesmoothies.com/blog/

smoothie in a pb cup

i try and get my greens in during the day..

but i also like my sweets.

today i combined them.

it started with this:

and the end of this:

i made this before work:

smoothie:

  • 1/2 cup greek yogurt
  • 2 big handful’s of spinach
  • 1/2 frozen banana
  • 1 teaspoon spirolina
  • 1/2 tablespoon raw honey
  • 1/2 tablespoon coconut butter

(some coconut flakes on top would also be a success)

i wasnt sure how this would turn out but i poured away:

i cut a little bit of this and poured a little bit of that.

tadah!

toppers:

  • organic apple, blueberries, kiwi
  • natures path vanilla almond granola
  • raw honey

it turned out to be truly a great one.

it carried me through work and i was off with alice for a hike:

(after a little snack of my leftover kobocha squash from last night..new fave on the go snack..its like candy mm)

yes alice..it was a bit sunny but wheres all that energy you had last night?

guess she was in need of some smoothie in a pb cup herself.

we had a nice time together.

green mango lassi

i knew what to do.
